MEXICAN NIGHT

On Saturday we shared our cooking adventure with our friends Brynn and Michelle. :) We had an evening of Latin foods, which were quite fantastic! Michelle made stacked enchiladas for us, an old family recipe that they eat during the holidays; Brynn made a tasty salad; and the girls from 19 Somerset brought what was supposed to be a 7-layer bean dip. It turned out to be something like 10 layers, but that's ok. In this dip, we incorporated re-fried beans (of course), homemade "garlicky guacamole" from a Southern BBQ cookbook that belongs to Emily's dad, sour cream, jalapenos, olives, tomatoes, fire roasted green chilies, lettuce, green onions, cheese.
